In college, I shared an apartment with three friends. We divvied up cooking responsibilities because none of us were on the “meal plan” after our freshman year — and you can only survive but so long on cold pizza and Lucky Charms.
One night, it was Angie’s turn to make dinner and stuffed peppers were on her menu. Of course, back in those days, if you didn’t have a recipe, or a Nonna, you had to wing it. There was no internet with access to a bazillion ways to make a stuffed pepper (we refer to this era as the dark ages). But Angie had seen her Mom make them a bunch of times and really – how hard could it be? Turns out, harder than she expected.
Coming out of the oven, they looked great and as starving college students, we hungrily crowded around the table. Each of us loaded our plates with the stuffed peppers. Fork and knife in hand, we dug in for our first bite and C-R-U-N-C-H!!! Our eyes widened as we nervously glanced at each other. Stuffed peppers aren’t supposed to be crunchy, and these nearly knocked out some fillings. I started to inspect my pepper and the ground beef and rice stuffing — then it hit me. The rice. It wasn’t pre-cooked. It was raw. Angie turned red with embarrassment, as we laughed. “Well, I didn’t know!” she defended herself.
This is not her recipe. Mine is a turkey version which is lighter because I used ground turkey breast. In place of (cooked) rice, I used old fashioned oats and it’s loaded with veggies, — kale, zucchini and onions, to add fiber and moisture to the turkey breast, which can be dry on its own. For this recipe, I saut? the vegetables first, to mellow the flavors, then just add the turkey, eggs, oatmeal and spices to that vegetable mix and stuff them in the pepper halves.]]>remain2016-08-04T16:07:29+09:00No Name NinjaNINJA BLOGNo Name Ninja

Crispy skin on a chicken is one of the best comfort foods in the world. However roasting a whole chicken to perfection can be a challenge, often resulting in overcooked thighs, burnt wings and limp skin. Since thighs are the same size, they will cook in a more uniform way and remain wonderfully succulent while the skin crisps up. Latitude 20 has taken on a club role here in Puerto Aventuras. In addition to good authentic food any time of the day, it’s the place to go to meet locals and other snow birds and ex-pats that spend several month a year here on the Mayan Riviera compass college. The restaurant is owned and run by Peter and Danny, both personable and sociable and I know that Danny has significant talent in the kitchen.
I was delighted to find out this year the Chef Danny holds weekly cooking classes at Latitude, just around the corner from where we stay here in Puerto Aventuras and across the dolphin pools from the Dreams Hotel Serviced apartment Sheung Wan. Classes are demonstration only meaning Danny does all the work and we get to eat the food, which is fine by me.
Classes are held at the restaurant’s open air kitchen where we stand around the wrap-around counter watching Danny cook a three course meal. It’s amazing what he can cook with gas burners and a small toaster oven, and cook it all from scratch reenex cps.

The recipe comes from the ever-talented Rachel of Sugar-Coated Inspiration. These Double Chocolate Peanut Butter Ice Cream Sandwiches made with homemade salted chocolate & peanut butter swirl ice cream and chocolate sugar cookies are basically the best thing ever. And yes, these ice cream sandwiches taste just as good as they look.
The cookies have an amazing fudgy brownie center, with crisp edges. I love these zucchini fritters. I often prepare half recipe (about ten fritters or more) and…eat it all by myself. They have that taste that just lead you to eat one after another.
Fortunately, they’re light and give me no guilty feeling. I called them zucchini fritters but they’re not deep fried. I do cook them on a pan, but just adding oil with a spray and using a non-adherent pan.
They’re good served immediately, but I have also eaten them after a while and they were good the same.
Zucchini have few calories, and this recipe has some flour and cheese, but no fat. This recipe is for about 30 fritters…each of them with only 31 calories!

I’ve probably said before that I came into this world with a ravenous appetite. When I was a child, raiding the refrigerator was one of my favorite pastimes. My Mom would regularly look for something in the fridge that she had planned for dinner, and whatever she was looking for disappeared days ago as a snack for little Billy. I was indeed an expensive child to feed joyetech egrip vt!
After my post-school snack, I’d usually be hanging close to the kitchen to see what Mom was cooking for supper. She was a great cook, but she typically made pretty basic southern fare. On occasion, she prepared stuffed peppers, a real treat for my young appetite. Her preparation consisted of the classic stuffing of hamburger meat, onions, and rice and topped with tomato sauce tourism industry events.
My sweet Mom is now 91 and doesn’t cook anymore, but I have such fond memories of spending time with her in the kitchen. In honor of my Mom, I made a variation of her stuffed peppers with ground chicken, farro, corn, tomatoes, and basil. I topped the peppers with a combination of Parmesan and fresh mozzarella cheeses white wine.

More importantly, though, I no longer feel hungry all the time… in fact, in the past week, I’ve naturally decreased my calorie intake from 2200 to around 1800-1900 calories per day, and sometimes even less. I’ve even had days when I consumed around 1500 and still felt very full and satisfied. Not that I’m really looking to create a deficit, but I’m just saying: I’ve been eating a lot less and yet, don’t suffer from this insatiable hunger anymore heart disease.
Another MAJOR advantage for me is that Keto definitely keeps me away from all forms of sugar. Since I don’t do sweeteners and since natural sugars are way too high in carbs, I can’t afford to have any.Not if I’m hoping to eat any vegetables at all, that is. And frankly, I’d much rather eat a ton of veggies than a tiny little bit of sugar. For real china work visa!
Hey, even my nut butter addiction is pretty much under control now… The jars are piling up, I seem to be making new batches faster than I can get through them, which is not a bad thing me thinks. And I even give lots of them away… I just make ‘em, taste ‘em and be rid of ‘em. No use letting them go bad in my pantry, let someone else enjoy the goods Antique jewelry!
So yeah. Keto and I still aren’t the best of friends, but at least we’re like getting along now. It only took 10½ weeks!!! My only real issue now is with the limited amount (and variety) of vegetables that I get to eat in a day.
